Tadka Dal is simple and delicious dish which can be used for serving at parties and is one of the popular dish available in most of the Dhabas. Tadka means tempering with ghee, mustard, cumin seeds and flavored with onions, garlic, red chilies, green chilies etc. You can put any tempering that you like. You can also add saunf (fennel seeds), asafetida (hing) to you tempering.
Tadka Dal is aNorth Indian style of preparing lentils where the cooked lentils, usually red gram lentils (tuvar dal) or split moong lentils, are tempered with spices. This lentil preparation has the warmth of the spices added to it, but not the fire. In Indian cooking, tempering is added to the boiled lentils just before serving the food.
The result is an undeniably Indian flavor and aroma. There are probably many versions of this dal region wise or as per your liking and taste who prepare the dal. Some add ginger and garlicas well. Usually in North India they also add the amchur powder (powder of dried mango), to give the dal a slight tangy taste. You could substitute this with a littletamarind pasteor add a finely chopped tomato instead.
The taste would be a bit different but just as good. Its very rare that there is any Indian kitchen without the lentils or beans. Lentils are vital ingredient in every day’s cooking. Take a pan, add little ghee, mustard, cumin, dry red chillies, curry leaves, crushed garlic and mix well then add chopped onions, hing (asafetida), turmeric, green chilies and mix well.
Lastly add the boiled dal and add water if required and bring to boil. The consistency of the dal can be made as per your liking. Dal is generally eaten as accompaniment to Roti or Steamed white rice. Tur Dal or split Pigeon peas are generally used in preperation of this dish.
