The secret to the crusty potatoes is the pre-oven boiling in salted and seasoned water. Here the potatoes absorb the flavors and salt, but more importantly cooks the surface of the potato, which actually forms the great crunchy texture in the oven. Once done, drain the water and air dry the potatoes well.

Coat them well with some olive oil, pepper and salt and mix well. Place the potatoes pieces in a baking tray and roast in the oven at 375 degrees for about 35 minutes or until they turn golden brown and crunchy. By the way, it's very important to let the potatoes really dry well before coating them with oil.

The potato skin is a concentrated source of dietary fiber, so to get the most nutritional value from this vegetable, don't peel it and consume both the flesh and the skin.
