Tomato is typically red in colour, savoury, edible fruit originated from South America and spread around the world following the Spanish colonization of the Americas. Now there are many varieties widely grown in green houses in cooler climates. The first domesticated tomato may have been a little yellow fruit, similar in size to a cherry tomato, grown by the Aztecs of Central Mexico. According to the writings of Aztec, tomatoes were prepared with peppers, corn and salt. The word tomato comes from the Aztec “tomatl”, literally means "the swelling fruit".
Tomato is one very important ingredient used in the Indian cuisine. These lovely red cute glossy shiny vegetable is almost used in every Indian curry that given a tangy taste to the dish. Varied recipes are prepared with this vegetable like the tomato sauce, ketchup, tomato juice, tomato puree, tomato rasam and so many to go in the list.
Sugars, organic acids, free amino acids, and salts are the main taste components in a tomato. The tomato fruit is consumed in varied ways, including raw, as an ingredient in many dishes and sauces, and in drinks. The fruit is rich in lycopene, which may have beneficial health effects. Lycopene is a powerful antioxidant that decreases the risk of certain cancers and heart disease. Cooked tomato products, sauces and juices contain higher amounts of lycopene than raw tomatoes due to greater concentration.
Tomatoes are loaded with many, many health benefits. In fact, they are incredibly versatile and can be prepared in a seemingly endless number of dishes, as well as being great to eat alone. Tomato is an important ingredient in almost every household. Below listed are some of my favourite dishes made with tomatoes giving a nice taste and texture to the dish.
Basic Onion Tomato Gravy Using Pressure Cooker:
Onion tomato gravy is a spicy tangy sauce made with sliced onion, tomato, flavoured with ginger garlic paste, a pinch of turmeric, spiced with chilli powder, cumin and coriander powder; all ingredients combined and cooked in pressure cooker. This is then either pureed in a blender or used or can also be used just like that. There are various ways of using this wonderfully spiced onion tomato gravy.
Pasta with Simple Tomato Sauce This is a classic pasta sauce dish - tomatoes with creamy mozzarella and fresh basil. Herbs and onions add extra depth of flavour.
Drumstick Tomato Curry is a simplle dish, drumsticks pieces cooked in mildly spiced tomato gravy.
Mexican Tomato Rice with Beans is a one pot scrumptious dish which is similar to the Tomato rice, prepared with combining of white rice; beans, sautéed onions and flavoured with garlic, cilantro; added to some good amount of juicy red tomato puree.
Brinjal Potato Curry with Onion Tomato Gravy, popularly known as Aloo baingan ki subji is made with cubed brinjals and potatoes cooked in a onion tomato gravy.

Masala Dal with Onion Tomato Gravy is a simple dish yet delicious because of the seasoning/ tadka that is used with this dal. It is spicy and served in dhabas.
Mix Vegetable Korma with Onion Tomato Gravy is a speciality dish that shows off in any rich banquet food and always a reson to smile for.
Stuffed Potatoes in Silky Tomato Sauce Aloo Makhani Stuffed Potatoes in Silky Tomato Sauce - Aloo Makhani is a classic delicacy made with amazingly stuffed potatoes cooked in aromatic and rich makhani gravy.
Tomato Cut Salan Just like the famous Mirchi ka Salan and Baghare Baingan, Tamatar cut Salan is also ubiquotous to Hyderabadi cuisine. All these three mentioned curries, the perfect sides to a Biryani, have the same base gravy, with only brinjals in Baghare Baingan, chillies in Mirchi ka Salan and tomatoes here in Tamatar ka Salan. You can also add fish to the same curry base and you get Machli ka Salan. I have used cherry tomatoes for the curry. Usually regular tomatoes are used which are simply cut into two halves. Tamatar ka Salan is also referred to as Bagharay Tamatar by some people.
Ridge Gourd tomato and urad dal is a humble mildly spiced dish, very simple and takes very less time to cook, healthy and nutritious to eat.
Roasted Pumpkin Tomato Soup Roasting the vegetables really brings out their flavour in this dish. The croutons are normally served with Bouillabaisse but also go very well with this dish.
Tomato ka salan is also known as Dum ka Tamatar which goes very well with pulaos. Whole tomatoes are cooked in amazing peanut-sesame seeds gravy flavoured with some fresh herbs, spices and tanginess from the tamarind juice. It’s an exotic gravy and taste is truly flavourful and aromatic.
Hot tomato and spring onions curry is a very simple and fast to cook dish. The dish is spicy and tastes great with roti, chappati or rice. Generally this curry is considered to be a poor man’s dish. You would find a lot of people cooking this dish when the tomatoes are sold real cheap and spring onions in abundance. Spring onions give a unique flavour and enhance the taste of the dish.
Spiny Gourd Onion Tomato Fry quarters are slow roasted in spices which bring out the flavour of the vegetable. It has a meaty texture and a unique flavour and makes a good side with rice and rasam or pappu pulusu.
Tomato Dal Tadka tomato pappu is an excellent stew made with lentils cooked in tomatoes. This recipe is immensely simple to make and the taste is out of this world.
Tomato rice Rice cooked with ripe juicy tomatoes along with aromatic spices is delicious and tasty treat to the palate.
Baby Corn Mushroom peas in Onion Tomato Gravy This is a wonderful Asian stir fry, the tempting mushroom baby corn masala is a mixed vegetable recipe with mushrooms and baby corns stir fried together.
Tomato bath There are probably many recipes for tomato rice. This is a south Indian recipe for tomato rice (bhath) that really liked by everyone. Serve with papadams and yoghurt.
Tomato Pappu is an integral dish of every day Andhra vegetarian food. This dish is very simple, earthy and a soulful food. Tur dal or Kandi Pappu with tomato is a winning combination and addition of fresh coriander adds a perfect touch. Pappu in telugu is known as the dal.
