Hot Tomatoes and Spring Onions Curry

Ingredients used in Hot Tomatoes and Spring Onions Curry
• Red chilli powder - to taste.
• Curry leaves - 1 springs.
• Turmeric powder - 1/2 teaspoons.
• Urad dal - 1 teaspoons.
• Cumin seeds (jeera) - 1 teaspoons.
• Mustard seeds - 1 teaspoons.
• Spring onions - 2 bunch.
• Tomatoes - 5 numbers.
• Onion - 1 numbers.
• Salt - to taste.
• Garam masala powder - to taste.
• Oil for cooking - to fry.
• Coriander leaves (garnishing) - 1 bunch.
Method:

Chop onions, tomatoes and spring onions separately and keep aside. Heat oil in a pan, once it is hot; add mustard and cumin seeds (jeera). Once they start to splutter add urad dal, chopped onions, turmeric powder, curry leaves and fry till the onions are translucent then add the chopped tomatoes and mix well. Now add chilli powder, salt to taste, chopped spring onions and mix well. Cover with lid and cook till the tomatoes are soft (you need not add any water as tomatoes gives required water for the gravy but if the curry is too thick then add required quantity of water) and cook until you get a thick consistency. Once done, remove lid and add garam masala powder, mix well and serve.

chef, i was allways wondering, does dals you use in your recipes, which you throw in th oil, are they soaked overnight? or raw? and if raw do they cook well?

we usually put in raw and they cook well in oil..lets see what the chef has to say.... but we use them raw and they cook nice in oil
