Sarva pindi is a savory pancake made of rice flour, channa dal (lentil) and spices to make it a delicious and healthy dish. What does sarva pindi actually mean? This word is divided into two Sarva which means a deep pot or pan and Appa means a cake sort of preparation.
Hence the word to word translation of Sarva pindi is the pan cake.Sarva Pindi pancake is one of the ethnic dishes from the Telangana cuisine.
 
Telangana cuisine was once the so called underrated rustic, spicy, pungent cuisine and is now getting the recognition it truly deserves. It is now being viewed as a distinct and sophisticated form of cooking in its own right, with explosive new tastes and textures, both vegetarian and non-vegetarian. Telangana cuisine is distinguished for its highly spicy and tangy tastes and flavors.
 
The main aspects of this cuisine are the dependence on tamarind and chillies. There are other ingredients are the gongura leaf (also known as Ambada). The gongura gosht is delicious and for the vegetarian, the gongura beautifully compliments the channa dal. One of the most aromatic green chutneys is made from the gongura. Hing is used extensively in Telangana cooking and adds to the pungency.
 
There are also a variety of non-vegetarian food like the Hyderabadi biryani, pungent chicken curry, and Oorru Kodi Pulusu. Some of the most flour based popular savory dishes which is popularly known as Bhakshaalu are Pappubiyyam , Batti atukulu , uppudupindi, Aloo bath , Katte pelaalu, Sarvapindi, Sakinaalu, Sattu Pindi, Sarva pindi is one of the most favorite snacks of all as this dish is not too hard or not too soft chewy snack that everybody enjoys. Sarva pindi is very uniquely prepared by pressing the ingredients mixture into the pan (sarva in telugu) and cooked on a very slow to medium heat.
 
This north Telangana traditional dish is a quick snack for all the kids and adults and can also be served as an evening snack crispy or for breakfast. Rice flour (also rice powder) is a form of flour made from finely milled rice. It is distinct from rice starch, which is usually produced by steeping rice in lye. Rice flour may be made from either white rice or brown rice. To make the flour, the husk of rice or paddy is removed and raw rice is obtained.
 
The raw rice is then ground to flour. Rice flour is a particularly good substitute for wheat flour, which causes irritation in the digestive systems of those who are gluten-intolerant. Rice flour is also used as a thickening agent in recipes that are refrigerated or frozen since it inhibits liquid separation. The flour is principally starch, plus a small amount of protein. The starch is waxy and makes it sticky hence they Channa dal and sesame seeds are added to give a nice texture and enhances the taste to make it more nutritious meal. To prepare the Sarva pindi pan cakes, soak channa dal (chick pea lentils) in water for half hour.
 
Drain off the water from the channa dal and in a mixing bowl add the soaked channa dal, ginger garlic paste, finely chopped onions, green chillies, curry leaves, salt, red chilli powder and sesame seeds. Add the rice flour to it and mix well then add enough water to form soft dough. In a non stick pan add a little oil and take a hand full of dough make a nice ball and spread the dough all over the pan equally with your fingers.
The dough might stick while spreading hence dip your finger in little oil and spread it well. Make a small holes all over (helps in making the pancake crispy while frying) and put little oil over and cover it with lid and cook over a slow flame till it turns golden brown color. Directions | How to make Sarva Pindi Spicy Rice Flour Pancake  Soak channa dal in water for 30min. Now take a bowl add soaked channa dal remove water, gingergarlic paste,onion,salt,red chilli powder, sesame seeds,curry leaves,green chillies chopped,Rice flour mix well then add enough water  to make a soft dough. Take a pan add little oil, take a hand full for dough and make a ball spread all over the pan equally. Make a small holes all over add oil on top of it and cover it with a lid and cook in slow flame till it is golden brown colour. Can cook both the side if needed.
