Roasted Pumpkin Tomato Soup

Ingredients used in Roasted Pumpkin Tomato Soup
• Vegetable stock - 150 ml.
• Butter - 3 tablespoons.
• Onions - 1 number.
• Carrot - 2 numbers.
• Olive oil - 1 tablespoon.
• Garlic - 7 cloves.
• Leeks - 1 tablespoon.
• Celery chopped - 1 tablespoon.
• Rose merry - 1 tea spoon.
• Crush pepper - 1 tea spoon.
• Basil (dry) - 1 tea spoon.
• Pumpkin - 250 grams.
• Tomato - 250 grams.
• All purpose flour - 1 tea spoon.
• Salt - to taste.
Method:
  • In a bowl add dry basil, rose merry, crush pepper, salt, chopped celery, leeks, garlic, pour some olive oil mix it well.
  • In this add tomatoes (cut them into half), pumpkin also cut them into small pieces.
  • Add carrot, onions, mix it well transfer into baking tray put it into oven cook for 45 minutes @ 160 C till pumpkin and tomatoes soft.
  • Heat butter add all-purpose flour cook this till raw flavor is gone.
  • Add vegetable stock, roasted pumpkin tomato puree, mix it well once this come to boil add sugar and mix it.
  • Finish of with cream topping on soup.

Serve this hot with toast.

Recipe of Roasted Pumpkin Tomato Soup:

Ingredients:

  1. Vegetable stock                -       150 ml
  2. Butter                      -       3 tbsp
  3. Onions                     -       1 no
  4. Carrots                     -       2 nos
  5. Olive oil                   -       1 tbsp
  6. Garlic                       -       5 nos
  7. Leeks                       -       1 tsp
  8. Celery, chopped       -       1 tsp
  9. Rose mary                        -       ½ tsp
  10. Pepper, crushed       -       ½ tsp
  11. Basil, dry                 -       ½ tsp
  12. Pumpkin, cubes       -       250 gms
  13. Tomato                    -       250 gms
  14. All-purpose flour      -       1 tsp
  15. Salt                          -       to taste

Directions:

  1. Take a bowl and add dry basil, rose mary, crushed pepper, salt, chopped celery, leeks, garlic. Pour some olive oil and mix well.
  2. In this mixture, add tomatoes (cut into halves), pumpkin cubes, carrots, onions and mix well.
  3. Transfer all ingredients into a baking try and put it into the oven and cook for 45 minutes @ 160 degree C or until pumpkin and tomatoes become soft.
  4. Heat butter, add all-purpose flour and sauté till raw flavours are gone.
  5. Add vegetable stock, roasted pumpkin & tomato puree and mix well.
  6. Once this comes to a boil, add pinch of sugar and mix.
  7. Finish it off with a dash of cream.
  8. Serve hot with toast.

Hi you've written 160' C in the description but it shows 200' C in the video can you clear that confusion? I tried making it today but the pumpkins didn't cook even after 45 min in 200' C. So I cooked it another 15-20 mins sk a lo
