Ingredients used in Andhra Tomato Pickle
• Red chilli powder - 6 teaspoons.
• Salt - 4 teaspoons.
• Homemade methi powder(dry roast seeds and grind) - 1/2 teaspoons.
• Sugar - 1/2 teaspoons.
• Tamarind paste - 3/4 teaspoons.
• Oil - 1.5 cup.
• Turmeric - 1/2 teaspoons.
• Washed and dried big tomatoes - 6 large.
• Methi seeds - 1.5 teaspoons.
• Mustard seeds - 2.5 teaspoons.
• Asafoetida - 1/2 teaspoons.
Method:

Heat 1 cup of oil, cut the tomatoes into 1 inch cubes and start frying. Add turmeric powder, sugar and tamarind paste to the frying tomatoes. Fry till oil starts showing in the pan. Make sure you dont let it get too dry. Heat the remaining oil in a pan and add methi seeds and mustard seeds. Once mustard starts to splitter, add asafoetida and turn off the stove. Immediatly add chilli powder to this oil and mix well. Once the fried tomatoes cool off, add the methi powder and salt. Grind everything together into a smooth paste.
