Ingredients used in Egg Sambar
• Eggs (boiled) - 6 numbers.
• Tur dal (boiled) - 1 cup.
• Oil - 2-3 tablespoons.
• Mustard seeds - 1/2 tea spoon.
• Onion (chopped) - 1 number.
• Turmeric powder - 1/4 tea spoon.
• Green chilies (slit) - 4-5 numbers.
• Curry leaves - 2 springs.
• Mint leaves - 1 bunch.
• Drumstick - 1 number.
• Coriander leaves (chopped) - 1 bunch.
• Salt - to taste.
• Tomatoes (chopped) - 2 numbers.
• Tamarind juice - 1 cup.
• Water - 2 cups.
• Red chilli powder - 1 tea spoon.
• Sugar (optional) - 1 tea spoon.
• Fenugreek seeds powder - 1/4 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Garlic - 5-6 clove.
Method:
  • In a sauce pot, heat some oil and when it gets hot, add mustard seeds. When they start to splutter, add onions, turmeric powder and sauté for a while.
  • Add slit green chilies, curry leaves, mint leaves and fry well, later add drumstick pieces, chopped coriander leaves, salt and cook for a minute.
  • Add chopped tomatoes, tamarind juice, water and allow boiling vigorously. Add chili powder, little sugar (optional), fenugreek seed powder, and mix well.
  • Add dal paste (toor dal boiled and blended in the mixie to make a paste) and mix thoroughly well. While the dal is boiling, in a dingchik, crush some cumin seeds and few cloves of garlic.
  • Add this in the sambar and allow it to boil well. At last, add in the boiled eggs and just boil for a minute and switch off the flame.

Serve with hot rice.

Egg Sambar is an amazing mix of lentils, vegetables and boiled eggs cooked together in a spicy and tangy stew mix of tamarind juice and tomatoes along with fantastic amalgamation of spices that includes turmeric, chilli powder, freshly crushed cumin seedsgarlic cloves, fenugreek seeds  and fresh herbs like curry leaves, mint leaves and coriander leaves that enhances the flavour and is very refreshing to taste.

 

This lentil stew is extremely awesome, highly flavorful, scrumptious, appetizing and a protein rich dish that can be eaten with rice, chapatti or roti. Overall this Egg Sambar on cooking gives a tantalizing aroma all over the house and is exceptionally comforting to eat. Sambar is a quintessential and a popular signature dish in the Tamil Nadu cuisine. It is prepared almost every day in most Tamilian household. Sambar is often cooked with one or more vegetables like okra, drumstick, carrot, radish, pumpkin, potatoes, tomatoes, brinjal and whole/ halved onions or shallots.

Recipe:  Egg Sambar

Ingredients:

  1. Eggs, boiled                                   -       6 nos
  2. Tur dal, boiled                              -       1 cup
  3. Oil                                                    -       1 tbsp
  4. Mustard seeds                               -       ½ tsp
  5. Onion, chopped                            -       1 no
  6. Turmeric powder                          -       ¼ tsp
  7. Green chillies, slit                       -       4-5 nos
  8. Curry leaves                                  -       2 sprigs
  9. Mint leaves                                   -       few
  10. Drumstick                                     -       1 no
  11. Coriander leaves, chopped       -       1 bunch
  12. Salt                                                  -       to taste
  13. Tomatoes, chopped                    -       2 nos
  14. Tamarind juice                            -       1 cup
  15. Water                                             -       2 cups
  16. Red chilli powder                        -       1 tsp
  17. Sugar (optional)                          -       pinch
  18. Fenugreek seeds powder           -       ¼ tsp
  19. Cumin seeds                                 -       ½ tsp
  20. Garlic                                             -       5-6 cloves

Directions:

  1. In a sauce pot, heat some oil and when it gets hot, add mustard seeds. When they start to splutter, add onions, turmeric and sauté for a while.

The key ingredient in making the sambar is the adding together of different aromatic spices that actually offers a fantastic and delicious essence and taste to this dish. Often fresh curry and coriander leaves are added at the end that enhances the aroma of the sambar. Sambar is the most common lentil based dish that goes well with rice and most of the enticing south Indian breakfast dishes like the Idli, Dosa, Uttappam and Vada.

 The longer the sambar is cooked the better the taste and flavors. South Indian food, people and culture are inextricably linked to a ubiquitous dish as in idli and sambhar, sambhar and rice and so on. Many families from different regions of the Indian subcontinent have developed and maintained their own adaptations of a dal and vegetable stew, and similar preparations are evident in such dishes known in local languages as rasam, charu, saaru, pappuchaaru, mukkala pulusu etc.

 Adding of eggs in sambar is unique but gives an exceptional taste and is nutritious and healthy too. Eggs are one of the most sought after ingredient especially used during making an appetizing breakfast. It is easy to cook, can make any dish in jiffy with eggs and is the ultimate versatile form for cooking. Eggs are a power packed food with umpteen health benefits. They are a good source of high protein with many dietary benefits.
