CORIANDER STEAMED CAKES

Ingredients used in CORIANDER STEAMED CAKES
• Cashew nuts - 5-6 numbers.
• Chana dal - 1 tea spoon.
• Poppy seeds - 1 tea spoon.
• Oil - 4 tablespoons.
• Garam masala - 1/2 tea spoon.
• Green chillies(finely chopped) - 2 numbers.
• Coconut(grated) - 2 tablespoons.
• Groundnut - 1/2 cup.
• Coriander leaves(chopped) - 1 cup.
• Chick pea flour - 1/2 cup.
• Rice flour - 1/2 cup.
• Salt - to taste.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Red chili powder - 1 tea spoon.
Method:
  • Heat 3 tablespoon oil in a pan and add cashew nuts, chana dal and switch off the flame.
  • Add poppy seeds, garam masala, green chillies, coconut and saute it.
  • Crush the groundnut coarsely using pestle.
  • Take a bowl and add groundnut powder, roasted mixture, coriander leaves, chick pea flour, rice flour, salt, water and mix thoroughly.
  • Apply oil to a cake tin and transfer the above mixture and spread it evenly.
  • Place it in the steamer and steam it for 10 to 15 minutes.
  • Demould it and cut into pieces.
  • Heat 2 tablespoon oil in a pan and add mustard seeds, cumin seeds, steamed pieces, sprinkle red chili powder and toss it.

Now the coriander steamed cake is ready to serve hot.

Coriander Steamed Cake is an excellent and appetizing snack recipe made with a combination of fresh coriander leaves, gram flour, rice flour, cashew nuts, channa dal, poppy seeds, roasted crushed groundnuts spiced with chillies; mix well together and steam cooked. This is a fantastic north Indian snack recipe that is usually made in the states of Rajasthan and Maharashtra. Steamed cooked foods are a brilliant method of cooking foods that are guilt free snacks and healthy to eat too.

 

They are soft, easy to chew and digest. Steam cooked hardly need very little oil or no oil. In this method, the food retains most of its water soluble vitamins and minerals. Steam cooking saves a lot of fuel and time compared to other cooking methods. Coriander leaves is a highly flavorful herb which is used to flavor a variety of foods. History states that it is one of the oldest herb and spice. It is an exceptional herb with anti-fungal, anti-oxidant, anti-bacterial, anti-viral properties.

 

It has a amazing healing power that aid curing flatulence, colic, spasms, nervous tension, foul breath, anaemia, insomnia, diabetes, digestive disorders, eye disorders etc. Coriander leaves are known as Cilantro and also looks similar to Italian flat parsley, which is also known as Chinese parsley. Both being fresh greens, a number of dishes can be prepared letting out its natural green color to the dish. Both curry leaves and coriander leaves are full of vitamins and minerals with additional benefit of dietary fiber.

 

Both promote digestion. Curry leaves are mainly used for seasoning. Curry leaves are used in some Ayurveda hair tonics as this encourages hair growth. They contain more vitamin ‘A’. Without coriander leaves and curry leaves, the popular Indian soup commonly known as rasam won’t taste good. They play an important role in Indian cuisines. Recipe of Coriander Steamed Cakes:

Ingredients:

Coriander Leaves, finely chopped             -       1 cup

Gram flour (besan atta)                               -       ½ cup

Rice flour                                                         -       ½ cup

Cashew nuts                                                   -       5 – 6 nos

Chana dal                                                       -       1 tsp

Poppy seeds                                                    -       1 tsp

Oil                                                                     -       5 tsp

Garam masala                                               -       ½ tsp

Green chillies, finely chopped                   -       2 nos

Coconut, grated                                             -       2 tbsp

Groundnuts, roasted & crushed                -       ½ cup

Salt                                                                    -       to taste

Mustard seeds                                                -       ½ tsp

Cumin seeds                                                    -       ½ tsp

Red chilli powder                                          -       1 tsp

Method:

  1. Heat 3 tbsp oil in a pan and add cashew nuts, chana dal. Lightly roasted them.
  2. Add poppy seeds, garam masala, green chillies, grated coconut and sauté well and switch off the flame.
  3. Take the roasted groundnuts and coarsely crush using pestle.
  4. Take a mixing bowl, add crushed groundnuts, the roasted mixture, chopped coriander leaves, chickpea flour, rice flour, salt, little by little water and mix thoroughly.
  5. Grease a cake tin and transfer the mixture and spread evenly.
  6. Place the cake tin in the steamer and steam cook for about 15 – 20 minutes.
  7. Remove and de-mould the steamed cake. Cut into pieces and keep aside.
  8. Heat 2 tbsp oil in a pan, add mustard seeds, cumin seeds, steamed cake pieces.
  9. Sprinkle some chilli powder and toss gently.
  10. Serve hot with any chutney or sauce.
