POTATO FRY PODIMAS

Ingredients used in POTATO FRY PODIMAS
• For potato fry - 1 cup.
• Potato - 2 numbers.
• Oil - to fry.
• Curry leaves - 2 springs.
• Coriander leaves - 1/2 bunch.
• Green chillies - 3 numbers.
• Salt - to taste.
• Red chilly powder - 1 tea spoon.
• For potato podimas - 1 cup.
• Mustard seeds - 1/2 tea spoon.
• Oil - 2 tablespoons.
• Red chillies - 2 numbers.
• Cumin seeds - 1/2 tea spoon.
• Channa dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Cashew nuts - 10-15 numbers.
• Asafoetida - 1 pinch.
• Green chillies(chopped) - 2 numbers.
• Curry leaves - 1 spring.
• Onion(chopped) - 1 number.
• Potato - 3 numbers.
• Coconut(powder) - 1-2 tablespoons.
• Lime juice - 1 tablespoon.
Method:

METHOD POTATO FRY:

  • Boil and cut the potato pieces.
  • Heat oil in a pan and fry the potato pieces on medium heat until it changes to golden brown in color and keep aside.
  • Place the 1 spring curry leaves, coriander leaves, green chilies and dip in the hot oil pan and fry it and place it on fried potatoes.
  • Sprinkle salt, red chilly powder and toss it.
  • Now potato fry is ready to serve hot.

METHOD POTATO PODIMAS:

  • Boil and mash the potatoes slightly.
  • Heat oil in a pan and add mustard seeds, red chilies, cumin seeds, channa dal, urad dal, cashew nuts and saute it.
  • Add asafoetida, chopped green chillies, curry leaves, onion and saute it.
  • Add potato, coconut and cook it.
  • At last, add lime juice and serve it.

When I was young I used to mashed potatoes for Bataka wada (Aloo chup), and my mom used to say, if you add Turmeric you are making sabzi, not a specialty dish. So adding turmeric will make any dish taste like a sabzi.
