Ingredients used in SPICY SAMBAR FRIED RICE
• Boiled rice - 2 cup.
• Butter - 2 tablespoons.
• Garlic (chopped ) - 1/2 tea spoon.
• Onion (chopped) - 1 number.
• Green chilly (chopped) - 3 numbers.
• Capsicum chopped (green, yellow) - 1 tablespoon.
• Peanuts (crushed) - 1 tablespoon.
• Tomatoes (chopped) - 2 numbers.
• Coriander (chopped) - 1 bunch.
• Salt - to taste.
• Curry leaves - 2 springs.
• Sambhar powder - 1 (1/2) tablespoons.
• Lime juice - 1 tablespoon.
• Grated coconut - 2 tablespoons.
Method:
  • In a bowl take butter, chopped garlic, chopped onion, chopped green chilly, chopped capsicum (green, yellow), crushed peanuts, chopped tomatoes, chopped coriander, grated coconut (optional), salt, curry leaves, sambhar powder, and mix it well.
  • Then transfer into the pan and cook it till the vegetables get mashed.
  • Add the boiled rice now and toss it.
  • Sprinkle lime juice and chopped coriander leaves on top.

sambhar biryani pulaoThe exact origin of making the fried rice is lost to history but is believed that it was invented sometime during the Sui dynasty (589618 AD), in the city of Yangzhou in eastern Jiangsu province. Yangchow (Yangzhou) Fried Rice is still the standard by which all other Chinese fried rice dishes are judged: morsels of fluffy rice tossed with roast pork, prawns, scallions and peas.

In American-Chinese restaurants you’ll sometimes find it called “special fried rice.” Today, fried rice dishes are found throughout China and India, particularly in the south, where rice is the staple grain. Fried rice is a quintessential comfort food, fast to cook, can use of the left overs without any wastage and easy to carry to office or school. That’s why it has made a great wave in the fast food industry and you find varieties of fried rice available in the food stalls present at every corner of the street.

Generally an excellent fried rice calls for rice cooked a day before as it would get slightly dry and won’t be sticky. You could also give different variation for the fried rice by adding some meat pieces, vegetables or both mixed and make it as per your taste and choice. A major part in making the fried rice is adding the ingredients to your taste. Traditionally a Chinese variety of fried rice consists of cooked rice, beans, carrots, ajinomoto, green chilies, pepper, soya sauce and spring onions stir fried on a high flame until they are nicely blended and gives a nice aroma.

Sambar powder is a popular and basic ingredient used for preparing the sambar (lentil stew) in southern India. It is normally served eaten with rice, idli, vada, dosas etc. Sambar powder is generally made at home with some wonderful Indian spices and each house has their own signature recipe for the sambar powder and quantity used. One can never imagine of even thinking of a delicious sambar without the homemade sambar powder.

Sambar powder is very aromatic and flavourful. If prepared at home, then the roasted and ground spices burst out with fragrance lingering into the kitchen. It has a very rich aroma that can tickle your nose if smelt from near. There are always times when you actually want to cook something quick to save time or make a quick meal to your guest. This spicy sambar fried rice would make a classic creation which can astonish your family or guest with a bolt from the blue.

How to prepare Spicy Sambhar Fried Rice:

Ingredients:

Boiled rice                             -           2 cups

Butter                                     -           2 tbsp

Capsicum (green, yellow)  -           1 tbsp

Coriander, finely chopped -           1 bunch

Curry leaves                         -           2 sprigs

Garlic, chopped                    -           ½ tsp

Coconut, grated                   -           2 tbsp

Green chilli, chopped          -           3 nos

Lime juice                              -           1 tbsp

Onion, chopped                   -           1 no

Peanut, crushed                   -           1 tbsp

Salt                                         -           to taste

Sambar powder                    -           1 ½ tbsp

Tomatoes, chopped             -           2 nos

Directions:

Take a bowl, add butter, chopped garlic, onion, green chillies, capsicum (green, yellow), crushed peanuts, tomatoes, coriander leaves, grated coconut (optional), salt, curry leaves, and sambar powder.

Mix the ingredients well and transfer into a pan. Stir fry well and cook for a minute until the vegetables get slightly soft but retain its crunchiness.

Add boiled rice and toss it and finally sprinkle little lime juice, chopped coriander and serve hot. Spicy Sambhar fried rice is simple rice prepared yet packed with flavours and rice compliments well with the crunchy vegetables and sambar powder.

i have never heard of this dish..i think u tried preparing veg bath in which sambhar powder is not added =D
