Rava delight is an excellent Indian sweet made with semolina combined with grated coconut, chopped almonds, pistachios, raisins and sugar mixed with ghee and water to make it into diamond shaped bars. Rava delight is an Indian sweet similar to the burfi or barfi which is a sweet confectionary from the Indian subcontinent.

Traditionally a plain burfi is made from condensed milk, cooked with sugar until it solidifies. There are many varieties of burfi which includes badam burfi (made with almonds), kaju barfi (made with cashews), besan barfi (made with gram flour). Semolina is also known as Bombay rava which is coarse, purified wheat middlings of durum wheat used in making pasta used as breakfast cereals and puddings.

Semolina is very gritty, coarse type of flour usually made from wheat however the term is also applied to maize. Semolina is made from durum wheat, a hard variety of wheat quite unlike the wheat used to make bread. Durum semolina is commonly used in the manufacturing of pasta because of its high gluten content, which gives the pasta its pleasant taste and ensures that it retains its shape during the cooking process.

In south Indian cuisine, semolina is extensively used in making various sweets and savory dishes. Rava kesari is one of the most popular dishes which are a soft dessert cum sweetmeat cooked with milk, cashew nuts and dried fruit etc. Semolina is used in making the very popular savory upma. Rava delight is flavored cardamom or nuts like cashew, almonds and sugar.

They are typically cut into square, diamond or round shapes and sometimes coated with a thin layer of edible metallic leaf known as vark (silver paper). Semolina is used in Italian cuisine for preparing gnocchi, pasta, etc. In bread making semolina is added to the flour mix which produces a tasty crust.

Semolina is popular in North Western Europe and North America as a dessert, boiled with milk, and sweetened. It is often flavored with vanilla and served with jam. Semolina is popularly used in the manufacturing of pasta which gives the pasta a lovely taste and texture. Semolina is also used quite effectively to thicken stews, as a base for soufflé, hot cereal or as a cooked meal on its own.

For preparing this traditional and delicious Indian sweet, Rava delight, firstly mix sugar and water together and boil over low heat. Stir on low heat till the sugar begun to melt. Add a tablespoon of ghee and simmer the syrup to become to one thread consistency. Stir occasionally.

In another pan, heat ghee and add rava. Stir fry on low heat till you get a nice aroma floating around and the rava turns light brown. Add all the chopped nuts like almonds, pistachios, raisins, cardamom and stir well.

When the mixture leaves the sides of the pan and become mass that can be spread on a greased tray. Spread the mixture evenly in a greased plate and allow cooling. Cut into diamond shaped pieces and store. The rava delight is pleasing and scrumptious Indian sweet.

Semolina is high in proteins and high in complex carbohydrates and fairly high in potassium, phosphorus, magnesium, calcium and fiber, with some iron, zinc, manganese and copper. It is low in saturated fat, cholesterol and sodium, and contains zero Trans- fatty acids. Semolina is also high in vitamin E and contains a fair amount of the B complex vitamins (especially folic acid).
