Mix Vegetable Curry is a popular delicious curry dish cooked with a variety of mixed vegetables with coconut milk. Traditionally mix vegetable curry or the Khatkhate curry is prepared with at least five types of vegetables which includes potatoes, carrot, gobi, beans & peas, plus grated coconut, jaggery, kokum, tamarind, tirphala/ tepphal (Sichuan pepper – a special spices from Konkan region), dried red chilles, garam masala powder and turmeric powder.
Apart from the above vegetables mentioned, this dish can also include vegetables like radish, sweet potato, corn, pumpkins and any seasonal vegetables. Goan cuisine has a number of influences from its Hindu foundations, contemporary methods of culinary art, and 400 years of Portuguese rule.

To prepare this traditional Goan style mix vegetable curry, firstly par boiled all chopped vegetables and keep aside. Heat 1 ½ tablespoons of butter in a pan and when it gets hot, add cumin seeds. Let that splutter and then add onion and fry until they are soft and translucent. Add ginger, garlic and green chillies Give it a mix and cook further for half a minute. Remove from heat and cool. Grind this to a fine paste by adding some water and keep aside.
Heat the remaining 1 ½ tablespoon butter and add the paste. Fry this mixture till the butter remains on the sides of the pan. Add the par boiled vegetables and salt to taste. Mix well such that the veggies are well coated with the spicy paste. Cover and cook for a minute. Add a cup of water, cover and cook till the veggies are fully cooked.
Add garam masala and coconut milk. Cook on low heat (one of the most important part in this process). As you see it is nicely boiling then turn off the heat and garnish it with freshly chopped coriander leaves and serve hot with any kind of bread or steamed rice. It goes well with both. This dish also tastes exceptionally well with peas pulao.
