Prawns with drumstick leaves

Ingredients used in Prawns with drumstick leaves
• Prawns(small) - 250 grams.
• Drumstick leaves - 1 cup.
• Turmeric powder - 1/4 tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Chilli powder - 1 tea spoon.
• Salt - to taste.
• Coriander powder - 1/2 tea spoon.
• Garam masala - 1/2 tea spoon.
• Oil - to fry.
• Tamarind juice - 1 tea spoon.
Method:
  • In a bowl, put in the small variety of prawns, turmeric powder, ginger garlic paste, red chili powder, coriander powder, garam masala, salt and mix all the ingredients well and marinate for some time.
  • In a pan, add little oil and add the leaves of drumstick in hot oil and fry. Cook the leaves till they are nice and crispy.
  • Remove from pan and keep aside. Add the marinated shrimp or prawns in the hot oil. salt well and cook for 2 -3 minutes.
  • When they slightly were done, add in the fried drumsticks leaves and mix well.
  • Add 1 teaspoon of tamarind juice. Mix and cover the pan with a lid and simmer for 1 minute and then switch off the flame.

Serve hot with rice, roti, chapatti etc.

Prawns are available all over the world and nearly used in all the cuisines of the world. There are umpteen prawn’s recipes that one would prepare and relish. They are easy to fast to cook. Broadly, prawns are of two types: smaller prawns and the bigger ones.

 

The bigger variety is commonly known as the Tiger prawns. Prawns are low on fats and calories and very good source of Omega 3 fatty acids which is very good for the heart. Even though Prawns are high in Cholesterol, they are high in good cholesterol and bring down the bad cholesterol. Prawns are also very easy to cook and they don’t take much oil or spices to cook them. Drumstick leaves are small, round, green in color and are popularly used in making a variety of dishes in the South Indian cuisine.

 

These leaves are derived from the Moringa plant which is a native to the sub-Himalayan areas of India, Pakistan, Bangladesh and Afghanistan. They are also grown in the tropics. Generally the leaves, bark, flowers, fruit, seeds, and root are used to make medicine. Like the drumsticks, drumstick leaves are also used in preparing dals, kormas and sambar. They are also fried with eggs, chicken or seafood. These leaves have a unique taste and enhance the taste of the dish.

 

The drumstick leaves are extremely healthy and they contain proteins, vitamins and minerals. They act as antioxidant and protect cells from damage. These leaves also have anti-bacterial and anti-septic properties hence they are sometimes used to clean wounds. They also aid in curing breathing disorders and hiccoughs. It is also said that drumstick leaves cure mouth ulcers. With such amazing and power packed health benefits why not try preparing this dish. Recipe of Prawn with Drumstick Leaves:

Ingredients:

  1. Prawns, small variety       -       250 gms
  2. Drumstick leaves               -       3 tbsp
  3. Turmeric powder              -       ¼ tsp
  4. Ginger garlic paste           -       1 tsp
  5. Chilli powder                     -       1 tsp
  6. Salt                                      -       to taste
  7. Coriander powder            -       ½ tsp
  8. Garam masala                 -       ½ tsp
  9. Oil                                      -       for frying
  10. Tamarind juice                -       1 tbsp

Directions:

  1. In a bowl, put in the small variety of prawns, turmeric powder, ginger garlic paste, red chilli powder, coriander powder, garam masala, salt and mix all the ingredients well. Marinate this for some time.
  2. In a pan, add little oil and add in the drumstick leaves. Fry the leaves well in the hot oil until they are nice and crispy.
  3. Remove the leaves from the pan and keep aside.
  4. Add the marinated prawns or shrimps in hot oil and sauté for about 2-3 minutes. When they are slightly done, add in the fried drumstick leaves and mix well.
  5. Add 1 tbsp of tamarind juice.
  6. Mix well and cover the pan with a lid. Simmer and cook for a minute and later switch off the flame.
  7. Serve hot with rice, roti, chapatti etc.

 

Drumstick leaves or Muranga Keerai is considered the ‘Queen of all Greens’ as it is valued for having the richest source of beta carotene among all green leafy vegetables. Because of the diversity of ways in cultural and varied cuisines, they are prepared in various ways; one can make a variety of dishes from the drumstick fruit, leaves or flowers.
