Ingredients used in Healthy Mixed Vegetable Omelet - Be Fit Be Cool AAPI
• Eggs - 2 numbers.
• Carrot - 1/4 cup.
• Pepper (green, red, yellow) - 1/4 cup.
• Garlic (chopped) - 1 teaspoons.
• Mushrooms - 1/4 cup.
• Onions (chopped) - 1/4 cup.
• Salt - .0 to taste.
• Pepper powder - 1/4 teaspoons.
• Paneer (grated) - 100 grams.
• Butter - 1/2 teaspoons.
Method:
1.Heat a non stick pan and add chopped garlic saut the garlic with out oil then add chopped carrot, mushrooms, green, red and yellow bell peppers and chopped onions, chopped parsley, saut it.
2.And add pinch of salt, pepper powder, mix it well and add grated paneer saut it and transfer in to a plate.
3.In a small bowl add two eggs beat it nicely and add pinch of salt, pepper powder mix it well.
4.Heat a pan add 1/2 tsp. of butter then pour the egg mixture cook it for one minute then put the vegetable mixture on the top of the omelette then fold it and serve it hot.

Dear vahchef, it is nice that you are using almost zero fat in your cooking for a healthy cause. However, adding a little oil while making your veggies would't have been harmful. Healthy does not mean abstinence. Everything in limits is the key!

Hi chef...thnk you for the wonderful recipe. I made it healthier (cholesterol free) by skipping the egg..I made a thin atta dosa batter (with wheat flour and some coconut) and used it instead of the eggs..) so no guilt of having eggs....?

Looks fantastic and healthy except for the amount of salt which was a big pinch and is not healthy and another thing most people need to cut out so I guess this could be left out or reduced wullie ?
