Ingredients used in Mutton Biryani
• Olive oil - 5 tablespoons.
• Lime - 1/2 number.
• Green chillies - 4 numbers.
• Cinnamon stick - 1 number.
• Bay leaves - 1 number.
• Cloves - 3 numbers.
• Star anise - 1 number.
• Black cardamom - 1 number.
• Green cardamom - 4 number.
• Ginger garlic paste - freshly grinded - 2 tablespoons.
• Onions - 2 numbers.
• Curd - 2 tablespoons.
• Basmati rice - 500 grams.
• Boneless mutton - shoulder joint - 800 grams.
• Ginger piece - 1 piece.
• Turmeric powder - 1 tea spoon.
• Salt - to taste.
• Tomato - small sized - 1 number.
• Mint leaves - 1/2 bunch.
• Coriander leaves - well chopped - 1/2 bunch.
• Water - as required.
Method:
  • Take a pressure cooker and add two medium sized tumbler of water , add mutton , turmeric , salt and ginger piece. Close the pressure cooker and wait for five whistles
  • Drain the mutton stock in a bowl and keep it aside.
  • Spread the boiled mutton over a plate and let it cool.
  • Grind the green chillies and tomato in a blender .
  • In the pressure cooker , heat the olive oil . Add the spices mentioned above and lightly fry it.
  • Add onions and fry golden brown , add ginger garlic paste and fry till the raw smell goes , add the grinded green chillies and tomato paste to this mixture, add the boiled mutton to this and add curd as well.
  • Now add the mutton stock and stir for five mins.Add rice , lime juice, salt and mix well .
  • Finally add chopped mint and coriander leaves and close the pressure cooker. wait for three whistles or fifteen mins.

Delicous and very tasty. But I had to put more water ( 6 cups of water for 3 cups of basmati rice) i.e exactly double the water suggested here.
