Ingredients used in Honey Bitter Gourd Chitranam
• Bitter gourd (chopped) - 1 cup.
• Water - as required.
• Salt - to taste.
• Basmati rice - 1 cup.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Dry red chilies - 3 number.
• Turmeric powder - 1 tea spoon.
• Hing / asafoetida - pinch.
• Tamarind juice - 1/2 cup.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Ginger (sliced) - 1 tea spoon.
• Capsicum (slices) - 1 number.
• Peanuts (crushed) - 1 tablespoon.
• Cinnamon powder - 1 tea spoon.
• Honey - 1 tea spoon.
Method:
  • Boil water in a pan, season with salt, add basmati rice and cook it.
  • Take water in a vessel, season with salt, bring it to boil,turn off the flame, transfer the chopped bitter gourd pieces and keep aside for about 20 minutes.
  • Heat oil in a pan, add mustard seeds, cumin seeds, dry red chilies, strained bitter gourd pieces, saute well, add turmeric powder, hing, toss it, add tamarind juice, coriander powder, cumin powder, salt and cook it well till the gravyreaches to the desired consistency.
  • Meanwhile, heat oil in a pan, add urad dal, sliced ginger pieces, capsicum pieces, crushed peanuts, a pinch of cinnamon powder, saute for about 5 minutes, transfer to the cooking pan with bitter gourd gravy, add few more crushed peanuts, honey, cooked rice, toss well, turn off the flame and transfer to serving plate.

Delicious Honey Bitter Gourd Chitranam is now ready to serve.
