Ingredients used in Barley Vegetable Soup
• Barley - 1/2 cup.
• Water - 3 cup.
• Butter - 1/2 tea spoon.
• Garlic (chopped) - 1/4 tea spoon.
• French beans (chopped) - 1 tea spoon.
• Carrots (chopped) - 1 tea spoon.
• Cabbage (chopped) - 1 tea spoon.
• Green chillies - 1-2 numbers.
• Salt - to taste.
• Coriander leaves (chopped) - 1 tea spoon.
Method:
  • Soaked the barley in water and boil it, later separate the boiled barley water.
  • Heat butter in a pan, add garlic, french beans, carrots, cabbage, green chillies and salt saute it for 2-3 minutes.
  • Then add cooked barley saute it for 3 minutes reduce the flame.
  • Add boiled barley water and cook it for few minutes.
  • Once it come to slightly thick consistency, check the seasoning, transfer into soup bowl by removing green chillies.

Now garnish with coriander leaves and serve it hot.

if we cook barley along with the vegetable instead of cooking separately, wouldn't it turn our soup into cloudy and scummy ???
