Tea Time Fruit Cake

Tea Time Fruit Cake A delicious, yummy and mouth-watering soft Fruit cake dunked with luscious candied fruits/ dried fruits, nuts and spices that delights your palate with an amalgamation of its explicit ginger, cinnamon and vanilla flavours.

 

A fantastic tea time treat to go with a slice of fruit cake. Traditionally Fruit cake is often served during Christmas and Weddings. They are generally heavy, dense cakes relatively having low flour content but contain lots of mixed dried fruits.

 

This awesome fruit cake is a fantastic treat that can be had with a piping hot cup of tea or eaten on its own. A very simple and easy to prepare Fruit cake with lots of candied fruits added in and  pinch of caraway seeds, ginger powder and cinnamon powder giving a delectable zest and punch to the cake.

 

Easy to make and fast to bake where you can just prepare before your kids come from school and serve them fresh snack to pamper their palates with awesome goodies. Kids will surely love munching on the candied tit-bits, dry fruits which gives a slight cracking feel on bite.

 

Getting kids involved in helping you with baking would be fun, at times messy too. But that should be Ok as they would be slowly developing their creative skills. So do encourage your kids in helping you while baking so that they develop in their visual and coordination skills.

Recipe of Tea Time Fruit Cake:

Ingredients:

All-purpose flour                -       100 gms

Sugar, powdered                -       100 gms

Butter                                   -       100 gms

Eggs                                      -       2 nos or 100 gms

Vanilla essence                   -       ½ tsp

Tuitty Fruitty/ Dry fruits  -       100 gms

Caraway seeds                    -       ¼ tsp

Ginger pd                            -       pinch

Cinnamon pd                     -       pinch

Baking pd                            -       pinch

Directions:

  1. Preheat the Philips Airfryer at 180 degree C for 3 mins. Lightly grease a round cake tin and line it with a double layer of baking parchment.
  2. In a mixing bowl, add in the butter and cream the butter with a hand blender. Once the butter gets soft, add little by little powdered sugar and blend together until light and fluffy.
  3. Add little vanilla essence and egg mixture and whisk together.
  4. In another bowl, add flour, tuitty fruity, caraway seeds, ginger powder, cinnamon powder, baking powder and mix well.
  5. Sift the flour mixture in the butter mixture and slowly fold together well.
  6. Spoon the mixture into the greased cake tin.
  7. Place the cake tin in the Philips Airfryer and bake for about 15 minutes at 180 degree C.
  8. After 15 mins, remove the tray, insert a skewer in the cake and if it comes out clean take it out and cool.
  9. Remove the lining sheet and sprinkle some powdered sugar over before cutting.
