Bhuteko Masu is a traditional and classic dish from the Nepalese cuisine. Bhuteko Masu is diced lamb or meat flavored with green chilli and fresh herbs to give a flavorful dish with thick coated gravy. This excellent dish is served alongside with hot steamed rice.

Bhuteko masu is a spicy lamb curry cooked with ginger, garlic and various aromatic Indian spices, herbs, yoghurt and mustard oil. The chunks of meat are cooked just enough until they are juicy and succulent flavored and coated with spices. Never the less an exceptional dish to relish from the cold mountains of Nepal! As rice is the staple food of Nepal, this dish goes well with rice or chapatti or bread. If you wish to make a dry gravy version of this dish then you can serve it as a starter too.

Food from the Nepalese cuisine is as diverse as the country itself and recipes are quick to cook and delicious to eat. Nepalese food is said to be famous for its nutritious food and appetizing taste. Most of the recipes are made with extensive use of fresh spices and flavorings such as ginger, garlic, coriander, pepper, cumin, chilies, cilantro, mustard oil, ghee and occasionally yak butter. Bhuteko masu is spiced or curried meat (which is usually made with chicken, mutton, buffalo or pork) with gravy and served as a main course dish.

Traditionally in making this dish the meat is marinated in a small amount of yoghurt, ginger, garlic, and red chili paste, and turmeric, salt and clarified butter for about four hours. It is then cooked with several other aromatic garam masalas and other herbs. Generally the Nepali garam masala or the masu ko masala is added at the end of the cooking process to retain the pleasant aroma. The meat cooks in its own juice with the help of little water. The marinated spices add flavor and tenderness.

It is served with rice, puffed-bread, chiura and a selection of chutneys and vegetables. Because of the use of a lot of organic herbs and spices which are the natural taste enhancers thus is considered one of the healthiest in the world. For preparing this scrumptious and luscious Bhuteko masu (goat meat fried with masala), firstly wash the lamb and drain well. Mix together the whole spices, half the asafetida, yoghurt, turmeric powder, salt, half the onions, ginger, mustard oil and a little water.

Add lamb and cook in a heavy bottomed pan till it is almost done. Dry the remaining liquid and remove from the flame and keep aside. In a flat pan, heat the butter and add the remaining onions and fry till golden brown. Drain the excess oil and keep aside.

To the same pan, add the semi cooked lamb and fry. Stir occasionally and cook till it is fully done and turns dark brown in color. Add the green garlic. Fry until it gets soft and changes color. Add the powder ingredients, chili powder and garam masala. Fry for 5 minutes more and check the seasoning and serve hot.
