Ingredients used in PRESSED RICE COCONUT SOUP
• Ginger - 1 tea spoon.
• Green chillies - 5 numbers.
• Water - 2 cup.
• Tomatoes(chopped) - 1 cup.
• Onion(chopped) - 1/2 cup.
• Salt - to taste.
• Peppercorn - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Flattened rice(pressed rice) - 1 cup.
• Coriander roots - 1/4 bunch.
• Curry leaves - 4 springs.
• Sugar - 1 tea spoon.
• Lime - 1 number.
• Coconut milk - 1/2 cup.
• Fennel seeds - 1/2 tea spoon.
Method:
  • In a pestle add ginger, green chilies, salt, fennel seeds, peppercorns and crush it.
  • Now take a bowl and add water, tomatoes, onion and boil it for 15 minutes.
  • Later add above crushed mixture, turmeric powder, flattened rice, coriander roots, curry leaves and cook it on a slow flame for 2 minutes.
  • After 2 minutes remove the coriander roots and mash it, later add little water, salt, sugar, squeeze lime juice and cook it for few minutes.
  • Finally add coconut milk, coriander leaves and switch off the flame.

Tasty pressed rice coconut soup is ready to serve.

Recipe:

Cut the tomatoes into 4 pieces in a container which could easily fit in the pressure cooker. Add some spices cinnamon stick, bay leaf, cloves, star anise and pepper to the tomatoes. Also add ginger and garlic. Include a small amount of beetroot, coriander stems and 1 cup water. pressure cook altogether approximately 4 whistles. however, it is possible to cook them on stovetop for not more than 10-12 minutes or also microwave them at quite high for approximately 6 minutes. you can add fried bread crumps or small meatballs for additional taste.
