Plantain Fry, Aratikaya fry or Vepudu, Balekai Palya, Raw Banana fry, Kachha Kela ki Sabzi, Vazhakkai Varuval or everything we might call it is simple plantain or raw banana fry in Andhra style. It is simple plantain fry with essential seasonings, onion, ginger-garlic paste and so on. You may choose to make this Aratikaya Vepudu on the weekend for easy meal together with Radish dal, sambar, rasam or simple dal tadka together with boiled rice.
Raw banana is known as aratikaya telugu as well as a stir fry is known as vepudu. Aratikaya vepudu indicates a raw banana stir fry. There are lots of variations of making a raw banana fry, I suppose every state has just one more version to make it.
Raw Plantains are a minimal glycemic way to obtain carb and packed with nutrients. Aratikaya since it's recognized in Andhra is a typical daily veggie in South Indian vegan delicacies. It often use to make stir fries, with yogurt or tamarind stew, pachadi and vadas with Raw Plantains.
The secret is to make use of fresh and firm green plantains prior to they ripen into a yellow shade. Aratikaya stir fry recipe creates an ideal side dish with rice, sambar, papad along with a bowl of yogurt. Tempering of curry leaves and fresh cilantro leaves like an ultimate garnish are crucial so do not give up with one of these ingredients.
