Ingredients used in Casserole
• Potato - 2 number.
• Onion - 2 numbers.
• Turnip - 1 number.
• Vegetable stock - 250 ml.
• Leek - 1 number.
• Carrot - 2 numbers.
• Button mushroom - 200 grams.
• Celery (chopped) - 3 springs.
• Green chili - 1 number.
• Dried basil - 1 tea spoon.
• Garlic paste - 3 cloves.
• Dried thyme - 1 tea spoon.
• White breadcrumbs - 1 cup.
• Mixed herbs (dried) - 1 tea spoon.
• Oil - as required.
• Salt - to taste.
• Yogurt - 1 cup.
• Cheese - half cup.
Method:
  • Preheat oven 180 C or 350F. Grease ovenproof dish.
  • In a pan, saute onion and garlic till soft.
  • Then add green pepper, leek and celery and saute till soft.
  • Now add mushrooms and saute till pale brown. Add carrots, turnip and potatoes and pour over stock.
  • Season and add herbs. reduce heat and simmer til vegetables are tender. (Thicken if necessary with potato starch, cornflour or vegetarian gravy granules)
  • Pour into casserole dish and pour over yoghurt.
  • Mix cheeseand crumbs together and sprinkle over top.
  • Place in oven and heat through till top is brown and crisp.

Cut into slices and serve hot.
