Ingredients used in Aloo Makhana Curry
• Potato (chopped) - 1 cup.
• Onion cubes - 1 cup.
• Tomato cubes - 1 cup.
• Water - as required.
• Caraway seeds - 1 tea spoon.
• Phool makhana (fox seeds) - 1 cup.
• Coconut oil - 1 tablespoon.
• Kasuri methi - 1 tea spoon.
• Ginger powder - 1 tea spoon.
• Coriander powder - 1 tablespoon.
• Turmeric powder - 1/2 tea spoon.
• Red chili powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Fennel powder - 1 tea spoon.
• Cashew nut powder - 1 tea spoon.
• Salt - to taste.
Method:
  • Blend baby onions and tomato cubes to a fine paste.
  • Boil potatoes and keep aside.
  • Roast phoolmakhana (fox nuts)in 1 tablespoon of coconut oil and transfer to a plate.
  • In the same pan, add caraway seeds, kasuri methi, prepared onion&tomato paste and saute well.
  • Now add ginger powder, fennel powder, cumin powder, red chili powder, turmeric powder, coriander powder, and cook till oil oozes out of the gravy.
  • Then add cashew nut powder,boiled potatoes along with water( water used in boiling potatoes), salt and cook well by stirring occasionally.
  • Also, add roasted phoolmakhana and cook it for 1-2 minutes.

DeliciousAloo makhana curry is now ready to serve.
