Ingredients used in Tunisian Vegetable Stew
• Onion - 1.5 cups.
• Chick peas (kabuli chana) - 1 cup.
• Cabbage - 1 cup.
• Vegetable stock - 1/4 cup.
• Green bell pepper - 1 number.
• Tomato - 1 cup.
• Turmeric powder - half tea spoon.
• Cinnamon powder - 1/4 tea spoon.
• Coriander powder - 2 teaspoons.
• Raisins or currants - 1/3 cup.
• Lemon juice - 1 tea spoon.
• Salt - to taste.
Method:
  • Saute onions in stock for 5 minutes. Add cabbage, salt and saute for another 5 min.
  • Then add bell pepper and spicesand saute another minute.
  • Add choppedtomatoes, chick peas and raisins, cook with lid on for15 minutes till vegies are tender.
  • Add lemon juice and salt to taste.

Serve on top of rice, couscous or other grain.
