Ingredients used in TOFU RICE
• Oil - as required.
• Onion(chopped) - 1 number.
• Salt - to taste.
• Capsicum(chopped) - 1 cup.
• Potatoes(chopped) - 1 cup.
• Carrot(chopped) - 1 cup.
• Turmeric - 1/2 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Red chilli powder - 1 tea spoon.
• Tofu(chopped) - 1 cup.
• Boiled rice - 2 cups.
Method:
Heat some oil in a pan, add chopped onion, salt, saute it till onions are slightly transparent. Now, add chopped capsicum, potatoes, saute for about a minutesput carrot, turmeric and saute it again till it’s 80% cooked. Then season it with coriander powder, cumin powder, red chili powder, tofu and mix it properly. In the same pan, add boiled rice and mix thoroughly. Switch off the flame and serve hot in a plate or pack in your kid’s lunch box.
