Spiny Gourd Fry Recipe, How To Make Spiny Gourd Fry Recipe

Spiny gourd is a seasonal vegetable popular in the state of Rajasthan especially during the rainy season. This vegetable has got a wonderful crunchy bite and complements very well with rice.

Spiny Gourd, gives delicious taste once cooked. This recipe is about a stir fry with this spiny gourds. It is easy to put together and what is really nice about it is the combination of spices that go into it and the slightly bitter-salty-sour-sweet taste. You can serve this on the side with rice or chapattis.

SPINY GOURD FRY

Ingredients used in SPINY GOURD FRY
• Spiny gourd - 6 number.
• Oil - 5 tablespoons.
• Salt - to taste.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Red chillies - 2 number.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 1 springs.
• Fenugreek powder - 1/4 tea spoon.
• Kashmiri chili powder - 1 tea spoon.
• Garlic - 8 clove.
Method:
  • Wash and cut spiny gourd into 4 pieces.
  • Heat oil in a pan, add spiny gourd pieces, salt, saute it and cook it with closed lid for 4-5 minutes on slow flame.
  • Once it is shallow fried transfer into a plate, in same oil pan add mustard seeds, cumin seeds, red chilies, turmeric powder, curry leaves, fenugreek powder, Kashmiri chili powder, crushed garlic and saute it.
  • Add fried spiny gourd and mix nicely and check for seasoning, if required add salt, red chili powder and saute it.

Now Spiny Gourd Fry is ready to serve.
