PUMPKIN AND MOONG DAL FRY

Ingredients used in PUMPKIN AND MOONG DAL FRY
• Pumpkin(boiled) - 1-1/2 cup.
• Onion seeds - 1 tea spoon.
• Curry leaves - 1 spring.
• Onion(cut into cubes) - 1 number.
• Turmeric powder - 2 pinch.
• Potatoes(boiled) - 2 numbers.
• Red chili flakes - 2 teaspoons.
• Salt - to taste.
• Oil - 3 tablespoons.
• Moong dal(soaked) - 1/2 cup.
Method:
  • Peel and cut the pumpkin into small pieces and blanch it in some salt water.
  • Soak the moong dal for 3 hours and drain the water.
  • Heat oil and add onion seeds, curry leaves, onions and saute it.
  • Add turmeric powder, moong dal, red chili flakes, pumpkin, potatoes, salt and toss it.

Now the pumpkin and moong dal fry is ready to serve with roti or pulka.
