Ingredients used in Gobi salan
• Gobi / cauliflower florets - 200 grams.
• Coriander leaves (chopped) - 1/2 bunch.
• Mint leaves (chopped) - 1/2 bunch.
• Turmeric powder - pinch.
• Onions (sliced) - 1 number.
• Chili powder - 1 tablespoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Curry leaves - 2 springs.
• Ginger garlic paste - 1 tea spoon.
• Red chilies - 3 number.
• Kalonji (optional) - 1/4 tea spoon.
• Methi seeds / fenugreek seeds - 1/8 tea spoon.
• Cumin seeds - 1/4 tea spoon.
• Mustard seeds - 1/4 tea spoon.
• Salt - to taste.
• Oil - 1 tablespoon.
• Coconut powder - 1 tablespoon.
• Sesame seeds - 1 tablespoon.
• Peanuts - 1 tablespoon.
• Green chilies (chopped) - 2 numbers.
• Yogurt - 2 tablespoons.
Method:
  • Dry roast peanuts on a slow flame, add sesame seeds, dry roast along with peanuts, then add coconut powder, saute it and grind to a fine paste by using water.
  • Heat oil in a pan, add mustard seeds, when mustard seeds splutter add cumin seeds, red chilies, methi seeds, Kalonji (optional), add sliced onions, salt, curry leaves, cook this till onions are golden in color,
  • Add ginger garlic paste cook this till raw flavor is gone, add turmeric powder, red chili powder, cumin powder, coriander powder, green chilies, add peanut and sesame seed paste, water, mix it like a thin paste, cook this with closed lid on a slow flame for about 30 minutes,
  • When oil oozes out of gravy then add chopped coriander leaves, chopped mint leaves, beaten yogurt and mix well.
  • Once it comes to boil, add the cauliflower pieces (boil the cauliflower in water with salt and turmeric powder) and let it cook with closed lid for another 5 minutes. Switch off the flame.

DeliciousGobi salan is now ready to serve.
