Ingredients used in Corn and cheese with saffron sauce
• Spring onions (finely chopped) - 2 springs.
• Milk - 1 cup.
• Corn (boil) - 1/2 cup.
• Paneer (cubes) - 100 grams.
• Nut meg powder - 1/4 tea spoon.
• Green chilies (chopped) - 3 numbers.
• Ginger (julienne) - 1/2 tea spoon.
• Garlic(chopped) - 1 tea spoon.
• Cardamom seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• All purpose flour - 1/2 tea spoon.
• Coriander leaves (chopped) - 1 tablespoon.
• Saffron strands - pinch.
• Onions (chopped) - 1 number.
• Oil - 3 tablespoons.
• Paneer (grated) - 1 cup.
Method:
  • Fry Paneer cubes in hot oil till their colour is slightly changed.
  • Heat oil in a pan, add cumin seeds, cardamom seeds, chopped garlic, juliennes of ginger, chopped onions, saute this till onions are golden in colour.
  • Then add all-purpose flour to it, mix it.
  • To it, even add milk in small quantities and keep mixing it.
  • Now add salt, chopped green chilies, nutmeg powder let this come to a boil.
  • In the same pan, add corn (boiled), cook it for about 2-3 minutes then add fried paneer cubes, chopped spring onions, chopped coriander leaves, grated paneer, saffron strands (soaked in hot water).

Serve this awesome rich dish with chapattis or pulka.

very nice recipe. one addition from my side. Instead of grated paneer if u can add white cheddar cheese it would not change the color and still give more flavouring.

Panner can be made at home using milk. In one of his paneer recipes I think he shows how to make paneer. If you like, you can try substituiting with paneer with tofu.

Yeah I dont think mozzarella or any other cheese is equivalent. You can buy paneer in any Indian grocery store or try making at home

raw milk, to make the base into a kind of white sauce. as he said, the recipe is a fusion of continental and indian cuisine.
