Ingredients used in Couscous Aromatique
• Couscous - 500 grams.
• Red lentils - 3 tablespoons.
• Onion - 1 number.
• Carrot - 2 numbers.
• Turnip - 1 number.
• Potato - 8 small.
• Green pepper - 1 number.
• Green beans - 100 grams.
• Fennel bulb - 1 number.
• Tomato - 1 number.
• Garlic paste - 2 cloves.
• Turmeric powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Cinnamon powder - half tea spoon.
• Ginger - 1 tea spoon.
• Red chili - 2 number.
• Veggie stock - 5 cups.
• Raisins - 1 tablespoon.
• Lemon - 1 number.
• Olive oil - 4 teaspoons.
• Salt - to taste.
Method:
  • Soak couscous in cold water for10 minutes. Drain and spread on a tray for 20 minutes.
  • Meanwhile, in a large saucepan, heat oil and fry veggies 10 minutes.
  • Then add ginger, garlic, and spices, and cook 2 minutes.
  • Pour in stock, lentils, tomatoes, raisins, and add seasonings. Bring to a boil and then simmer.
  • Meanwhile, steam couscous for 20 minutes. When finished, spoon couscous in serving dish and check on stew.
  • If vegetables are cooked to your liking and seasoned well add lemon rind and juice to it. Add harissa paste to taste as well.

Serve stew from casserole dish separate from couscous.
