DAHI BENDI KASHMIRI

Ingredients used in DAHI BENDI KASHMIRI
• Yogurt - 2 cups.
• Walnuts - 5-10 grams.
• Green chillies - 2 numbers.
• Garlic - 5 cloves.
• Salt - to taste.
• Okra - 250 grams.
• Mustard oil - 7 tablespoons.
• Bengal gram flour - 1 tablespoon.
• Kashmiri red chili powder - 1 tea spoon.
• Asafoetida - 1/4 teaspoons.
• Fennel powder - 1 tea spoon.
• Dry ginger powder - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Garam masala - 1 pinch.
• Cumin powder - 1/2 tea spoon.
• Sugar - 1 pinch.
• Dry mint leaves - 5 numbers.
Method:
  • Take a pan and add yogurt to cook it until it is reduced to ¾ quantity, it becomes thick by stirring it.
  • In the mixie jar add walnuts, green chillies, garlic, salt and make fine paste.
  • Slit the okra then stuff the above paste and drench in the bengal gram flour.
  • Heat 5 tablespoon mustard oil with pinch of salt in a pan and add okra, cook it until it changes to brown colour and transfer it into a plate.
  • Take a bowl and add kashmiri red chili powder, asafoetida, fennel powder, dry ginger powder, turmeric powder, garam masala, cumin powder, little water and mix it.
  • Heat 1 tablespoon oil in a pan and add above mixed masala water, cook it.
  • Add above thick yogurt, little water and boil it, then add cooked okra, pinch of sugar, little salt, dry mint leaves crush and boil it once.

Now ready to serve dahi bendi kasmiri with rice or roti.
