Ingredients used in Dahi Baigan Ka Salan
• Brinjal - 10 number.
• Curd - 1 cup.
• Oil - as required.
• Sesame seeds - 1 tablespoon.
• Desiccated coconut powder - 2 tablespoons.
• Peanuts - 2 tablespoons.
• Water - as required.
• Ginger garlic paste - 1 tea spoon.
• Dry red chilies - 3 number.
• Cumin seeds - 1 tea spoon.
• Fenugreek seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Onion (chopped) - 1 number.
• Mint leaves - 1/2 cup.
• Curry leaves - 3 sticks.
• Turmeric powder - 1 tea spoon.
• Salt - as required.
• Coriander powder - 1 tea spoon.
• Red chili powder - 1 tea spoon.
• Jaggery - 1 tea spoon.
• Coriander leaves (chopped) - 1/2 cup.
Method:
  • Dry roast peanuts, sesame seeds, desiccated coconut powder till they turn light brown in color, grind them to finepaste using water and transfer to a plate.
  • Heat oil in a pan, add mustard seeds, dry red chilies, cumin seeds, fenugreek seeds, chopped onion, curry leaves, turmeric powder, salt and give it a mix.
  • Then add ginger garlic paste, chopped mint leaves, coriander powder, red chili powder, prepared peanut paste along with a cup of water and cook till the oil floats on top of curry surface.
  • In the same pan, add slited brinjal pieces, curd and cook well.
  • Then add grated jaggery, and cook with closed lid for about 2 minutes.
  • At last, add chopped coriander leaves to the same pan.

Dahi Baigan Ka Salan is now ready to serve.
