Ingredients used in Dahi Baigan Ka Salan
• Brinjal - 10 number.
• Curd - 1 cup.
• Oil - as required.
• Sesame seeds - 1 tablespoon.
• Desiccated coconut powder - 2 tablespoons.
• Peanuts - 2 tablespoons.
• Water - as required.
• Ginger garlic paste - 1 tea spoon.
• Dry red chilies - 3 number.
• Cumin seeds - 1 tea spoon.
• Fenugreek seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Onion (chopped) - 1 number.
• Mint leaves - 1/2 cup.
• Curry leaves - 3 sticks.
• Turmeric powder - 1 tea spoon.
• Salt - as required.
• Coriander powder - 1 tea spoon.
• Red chili powder - 1 tea spoon.
• Jaggery - 1 tea spoon.
• Coriander leaves (chopped) - 1/2 cup.
Method:
Dry roast peanuts, sesame seeds, desiccated coconut powder till they turn light brown in color, grind them to finepaste using water and transfer to a plate. Heat oil in a pan, add mustard seeds, dry red chilies, cumin seeds, fenugreek seeds, chopped onion, curry leaves, turmeric powder, salt and give it a mix. Then add ginger garlic paste, chopped mint leaves, coriander powder, red chili powder, prepared peanut paste along with a cup of water and cook till the oil floats on top of curry surface. In the same pan, add slited brinjal pieces, curd and cook well. Then add grated jaggery, and cook with closed lid for about 2 minutes. At last, add chopped coriander leaves to the same pan. Dahi Baigan Ka Salan is now ready to serve.
