BRINJAL WITH SESAME SEEDS

Ingredients used in BRINJAL WITH SESAME SEEDS
• Egg plant - 250 grams.
• Coriander seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Fenugreek seeds - 1/4 tea spoon.
• Pepper corns - 1 tea spoon.
• Curry leaves - 1 spring.
• Sesame seeds - 2 tablespoons.
• Tamarind - 5 grams.
• Oil - 3 tablespoons.
• Mustard seeds - 1/2 tea spoon.
• Ginger garlic paste - 1 tablespoon.
• Onion paste - 1/2 cup.
• Green chili paste - 1 tablespoon.
• Salt - to taste.
• Amchur powder - 1/2 tea spoon.
Method:
  • Take the Eggplant and slit into 4 and place in salt water.
  • Heat a pan and add coriander seeds, cumin seeds, fenugreek seeds, peppercorns, curry leaves, sesame seeds, tamarind and dry roast it.
  • Transfer to a blender to make a fine powder.
  • Heat oil in a pan, add eggplant and cook it with closed lid for about 2-3 minutes. Move this fried eggplant to one corner.
  • Now in the same pan on another side add mustard, ginger garlic paste, onion paste, green chilli paste, salt and mix it, place lid cook it for 3 minutes.
  • To it add fine powder and mix it.
  • Check for seasoning and add amchur powder, mix and cook until it is done.
  • Now add chopped coriander leaves and serve it.
