Ingredients used in Basil Roasted Vegetables Over Couscous
• Couscous - 3 cups.
• Zucchini - 2 numbers.
• Mushroom - 1 cup.
• Red bell pepper - 1 number.
• Yellow bell pepper - 1 number.
• Onion - 1 number.
• Garlic ( chopped ) - 2 cloves.
• Fresh basil - 1/4 cup.
• Lemon juice - 2 teaspoons.
• Olive oil - 1 tea spoon.
• Salt - to taste.
Method:
  • In a bowl, add chopped basil, salt, lemon juice, crushed garlic and mix well.
  • Add chopped zucchini, bell peppers, onion, and mushrooms; toss well to coat.
  • Arrange vegetables in a single layer on a shallow roasting pan. cookfor 10 to 15minutes or until tender (stir every 10 minutes or so).
  • Pour roasted vegetables over cooked couscous.
  • Garnish with fresh basil sprigs if desired

Serve hot.
