Ingredients used in Barbecued pork ribs
• Pork loin back ribs - 1.5 kg.
• Coriander powder - 1 tea spoon.
• Paprika - half tea spoon.
• Pepper powder - 1/4 tea spoon.
• Ginger powder - 1 tea spoon.
• Spareribs glaze - 750 grams.
• Red currant jelly - half cup.
• Orange juice - 3 tablespoons.
• Lemon juice - 1 tablespoon.
• Dijon mustard - 1 tablespoon.
• Salt - to taste.
• Lemon juice - 2 tablespoons.
• Dijon mustard - 1 tablespoon.
Method:
  • In a bowl, add ginger powder, coriander powder, paprika, pepper powder, salt and rub onto the meaty side of the ribs. Cover and refregerate for 2 hours.
  • An hour before serving, start cooking ribs on hot coals or under broiler, turning time to time. Pork will take 60-70 mintutes to cook.
  • Meanwhile cook sauce by combining red currant jelly, orange, lemon juice with mustard.
  • Brush ribs frequently with the glaze during the last 15 minutes of cooking.
  • Garnish with orange slices.

Serve.
