Ingredients used in ARBI WITH SAMBHAR MASALA
• Sambhar powder - 1-1/2 tablespoon.
• Chilly powder - 1 tablespoon.
• Ginger garlic paste - 1/2 tea spoon.
• Chopped onion - 1 number.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 1 spring.
• Urad dal - 1/2 tea spoon.
• Fenugreek seeds - 1/4 tea spoon.
• Mustard seed - 1/2 tea spoon.
• Redchilly - 3 numbers.
• Arbi - 250 grams.
• Tamarind juice - 1/2 cup.
• Jaggery - 1 tablespoon.
• Salt - to taste.
• Oil - 2 tablespoons.
Method:
  • Boil and peel Arbi cut them in length wide.
  • Heat oil in a pan and fry the pieces of arbi and transfer to another plate.
  • In thesame oil add red chilly, mustard seeds, fenugreek seeds, urad dal, curry leaves, wait till they splutter, add turmeric powder, chopped onion, ginger garlic paste, chilly powder, sambhar powder, and tamarind juice, then add some water and jaggery, cover it with a lid let it cook for 10 to 12 minutes.
  • Now add arbi and mix it then cover it with a lid let it cook for 3-4 minutes and switch off the flame.

This curry is served hot with rice or chapatti.
