Ingredients used in Achari Gosht
• Salt - to taste.
• Red chilli powder - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Aniseeds - 1 tea spoon.
• Jaggery - 15 grams.
• Cloves - 5 numbers.
• Fenugreek seeds - 1 tea spoon.
• Nigella seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Garlic paste - 1 tea spoon.
• Ginger paste - 1 tea spoon.
• Onions - 3/4 cup.
• Coriander powder - 5 numbers.
• Mutton - 800 grams.
• Plain yogurt - 1 cup.
• Water - 4 cups.
• Mustard oil - 1/2 cup.
Method:
  • In a dish whisk the plain yogurt with one liter of water.
  • In a microwavable dish heat the mustard oil until hot in the microwave.
  • Add to the oil: the ginger paste, garlic paste, onion puree, cloves, mustard seeds, cumin seeds, nigella seeds, fenugreek seeds and aniseeds. And microwave on high for 8 minutes.
  • Then mix the red chilli powder, turmeric powder and salt and microwave for another 2 minutes.
  • Add the mutton, whole red chillies, jaggery and curd water mixture and cook in a pot on the stove for about 15 minutes, or until well done.
