Ingredients used in Zarda
• Basmati rice - 4 cups.
• Sugar - 4 cups.
• Raisin - 1 tablespoon.
• Walnut - 1 tablespoon.
• Almond - 1 tablespoon.
• Grated orange zest - 2 teaspoons.
• Cardamom pods - 10 numbers.
• Heavy cream - 3 tablespoons.
• Vegetable oil - 2 tablespoons.
• Orange food color - 1/4 tea spoon.
• Water - as required.
Method:
  • Pre-soak rice in water for atleast 10 to 15 minutes.
  • In a large pot add water, 5 cardamom pods, food color; bring to a boil. Slowly add in rice, reduce heat, cover and simmer until rice is tender, (about 20 minutes).
  • In a large skillet over low heat, fry the remaining 5 cardamom pods in oil for about 2 minutes.
  • Now mixthe cooked, drained rice, and sugar. Cover and cook for another 5 minutes.
  • Remove from heat and addheavy cream, raisins, walnuts, almonds and orange zest.

Serve hot.
