Ingredients used in White Texas Sheet cake
• Icing ingredients: - .
• Almond flavoring (extract) - 1/2 teaspoons.
• Salt - 1 teaspoons.
• Vanilla - 1 teaspoons.
• Buttermilk - 1 3/4 cup.
• Flour (maida) - 2 cup.
• Baking soda - 1 teaspoons.
• Sugar - 2 cup.
• Egg whites - 2 .
• Vegetable shortening (crisco) - 1/3 cup.
• Margarine or butter, melted - 1/2 cup.
• Flaked coconut, sweetened - 1/2 cup.
• Buttermilk - 1/3 cup.
• Powdered sugar - 2 1/2 cup.
Method:
Preheat oven to 350F. Grease amp; flour a 10x15 inch sheet cake pan (large cookie sheet). In a large bowl, use a mixer to beat first 3 ingredients till blended. Add baking soda, salt, flour, buttermill. vanilla amp; almond flavorings for about 2 minutes. Pour batter into prepared pan and bake 25-30 minutes or until light golden brown. While cake is baking, mix icing ingredients together in a bowl till well blended and smooth. Top cake with icing just after it comes out of the oven and is still warm. Serves 12-15. Notes: The icing soaks into the cake and makes it moist. If you like coconut, you will enjoy this cake. Recipe credit: from book called Goodness Gracious, by Roxie Kelley.

PLEASE NOTE: the shortening in posted recipe is supposed to be the first ingredient listed and not part of the icing! Simple sponge cake with coconut icing. wonderful after a spicy meal.
