Ingredients used in Vangibath
• Finely chopped onions - 1 numbers.
• Vangibath powder(mtr) - 1 to taste.
• Tamarind - 1 to taste.
• Red chillies - 4 No to taste.
• Urad dhal - 1 tablespoons.
• Channa dhal - 1 tablespoons.
• Mustard - 1 teaspoons.
• Cumin seeds - 1 teaspoons.
• Oil - 1 to fry.
• Brinjal( green brinjal tastes good, if available) - 1 numbers.
• Salt - 1 to taste.
• Rice - 1 cup.
Method:
First cut brinjal into medium pieces. Heat Oil in a pan. Once the oil is heated add mustard and cumin seeds. After mustard splitters add channa dhal, urad dhal and red chillies. Allow all these for few seconds and add chopped onion. Cook untill onion turns little brown, add brinjal. Make a thin tamarind paste with water and add it with brinjal. Add salt according to taste. Cook the brinjal untill it is half cooked or slightly more than that. Last add store bought MTR vangibath powder and cookk for few minutes till the masala powder gets along with all other ingridients. Mix thoroughly this mix with the cooked rice, add little bit heated oil if necessary while mixing if you feel it is dry. Vangibath is ready to eat.
