Ingredients used in Tomato Pickle
• Chopped omatoes - 1000 grams.
• Ginger - 1(1/2) cup.
• Garlic - 1(1/2) cup.
• Turmeric powder - 1 tea spoon.
• Mustard seeds - as required.
• Red chillies - 18 no.
• Vinegar - 1(1/2) cup.
• Sesame oil - as required.
• Fenugreek seeds - as required.
• Salt - to taste.
Method:
  • Cut tomatoes, add salt, turmeric powder ,1 cup vinegar and leave it for 2 hours.
  • Blend ginger,garlic,red chillies to a paste.
  • In a pan heat oil,fry mustard and fenugreek, blended mixture and fry for 20 minutes, add the tomatoes and remaining vinegar and allow it to boil till oil floats. Cool and store in a dry container.

Delicious tomato pickle is ready to serve with rice / chapatti.
