SUKHA ALOO BAINGAN

Ingredients used in SUKHA ALOO BAINGAN
• Eggplant(long slices) - 1 cup.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1 tea spoon.
• Onions(chopped) - 1 number.
• Turmeric powder - 1/2 tea spoon.
• Curry leaves - 1 spring.
• Chopped green chillies - 1 tea spoon.
• Red chilli powder - 1 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Potatoes(boiled pieces) - 1 cup.
• Oil - as required.
• Dry coconut powder - 1 tea spoon.
• Garlic - 5 cloves.
• Salt - to taste.
• Coriander leaves - 1/2 bunch.
Method:
  • Heat oil in a pan and add mustard seeds, cumin seeds, onions, eggplant, turmeric powder, curry leaves, chopped green chillies and place the lid and cook it.
  • Add red chilli powder, salt, coriander powder, potatoes and mix thoroughly.
  • Crush the garlic and cumin seeds with the pestle and add to the above mixture.
  • Atlast add dry coconut powder and coriander leaves and saute it for 2 mins.

Now the sukha aloo baingan is ready to serve with phulkas or roti.

I really like the looks of this masala but wondering if I can sub out the eggplant with something else? Maybe kaddu? (I strongly dislike eggplant). Keep 'em coming Sanjay, you are blasting my mind ;-) Can't wait start trying these new recipe
