BENDI CHUTNEY

Ingredients used in BENDI CHUTNEY
• Oil - 5 tablespoons.
• Green chillies - 4 numbers.
• Garlic - 10 cloves.
• Cumin seeds - 1/2 tea spoon.
• Okra - 1 cup.
• Tamarind(soaked) - 5 grams.
• Salt - to taste.
Method:
  • Heat oil in a pan and add okra pieces and shallow fry until okra become dry and crispy, later transfer into a plate.
  • In the same oil add green chillies, garlic and fry it, later transfer into same plate.
  • Take a stone motor pestle and add cumin seeds crush it, later add fried okra, garlic, green chillies, tamarind, salt and crush it to make coarse paste.

Now the bendi chutney is ready to serve.

I never thought of making chutney with bhendi! Sounds yummy. Maybe you could add hing and lime juice for more complex flavor??
