Ingredients used in STUFF EGGPLANT BAJJI
• Eggplant(big size) - 1 number.
• Chickpea flour - 1 cup.
• Salt - to taste.
• Ajwain/carom seeds - 1/2 tea spoon.
• Red chili powder - 1/2 tea spoon.
• Coriander powder - 1/4 tea spoon.
• Baking soda - 1 pinch.
• Potatoes(boiled and mashed) - 1 number.
• Pepper powder - 1 tea spoon.
• Sweetcorn - 1/4 cup.
• Cheese (grated) - 1/4 cup.
• Water - as required.
• Oil - as required.
Method:
Take eggplant of big size and cut into thin slices. Now in a bowl take chickpea flour, salt, ajwain, red chili powder, coriander powder, baking soda, water and mix it to make a thick batter. For stuffing take boiled and mashed potatoes, salt, pepper powder and mix it. For another kind of stuffing take sweetcorn and chop finely, in this add cheese, pepper powder and mix it thoroughly. Take the eggplant slice and wipe out the water then stuff this with potato stuffing and fold, then pin it with a toothpick and keep it aside. Again take another slice and stuff this with sweetcorn and again fold in the same way and pin it with the toothpick. Dip this rolled eggplant in the batter and deep fry in hot oil. Take them out on a tissue paper when they turn into golden color. Sprinkle chat masala and serve hot with any kind of sauce.
