SICHUAN STIR FRY POTATO

Ingredients used in SICHUAN STIR FRY POTATO
• All purpose flour - 2 tablespoons.
• Corn flour - 1 tablespoon.
• Potato - 2 numbers.
• Oil - to fry.
• Onion - 1 numbers.
• Dry red chillies - 2-3 numbers.
• Garlic(chopped) - 1 tea spoon.
• Ginger(chopped) - 1/2 tea spoon.
• Red chili paste - 1 tea spoon.
• Soya sauce - 1 tea spoon.
• Tomato ketchup - 1 tablespoons.
• Green bell pepper - 1 number.
• Yellow bell pepper - 1 number.
• Salt - to taste.
• Star anise powder - 1 pinch.
• Coriander leaves(chopped) - 1/2 tea spoon.
• Sugar - 1 pinch.
Method:
  • Take a bowl and add all purpose flour, corn flour, little water and mix nicely to make batter.
  • Add potato pieces and coat with this batter and deep fry in oil, transfer into plate.
  • After 5 minutes again fry potato pieces along with diced onions until it is crispy.
  • Cut dry red chillies into diamond shape with scissors.
  • Heat 1 teaspoon oil in a pan and add garlic, ginger, dry red chillies, red chili paste, soya sauce and saute it.
  • Add tomato ketchup, green bell pepper, yellow bell pepper, little water, salt, sugar and cook it.
  • To it add fried onions, potato, star anise powder, coriander and saute it.
  • Transfer into serving bowl.

Now sichuan stir fry potato is ready to serve.
