SHRIMP MANGO COCONUT PULAO

Ingredients used in SHRIMP MANGO COCONUT PULAO
• Mint leaves (chopped) - 1/2 bunch.
• Green chillies - 4 number.
• Turmeric powder - 1/4 tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Onions ( sliced) - 2 numbers.
• Cumin seeds - 1 tea spoon.
• Cinnamon stick (1 inch) - 2 numbers.
• Pepper corn - 5 numbers.
• Bay leaves - 2 numbers.
• Oil - 2 tablespoons.
• Chili powder - 2 tablespoons.
• Salt - to taste.
• Water - 1(3/4) cup.
• Rice - 1 cup.
• Shrimps (cleaned & deshelled) - 250 grams.
• Coriander leaves (chopped) - 1/2 bunch.
• Tomatoes - 2 numbers.
• Coconut milk - 1/2 cup.
• Garam masala - 1 tea spoon.
• Mango slices - 1 cup.
• Butter (cubes) - 4-5 numbers.
Method:
  • In a bowl, marinate the shrimps with salt, chilli powder.
  • Heat oil in a pan, add bay leaves, peppercorns, cinnamon sticks, saute it.
  • Now add cumin seeds, slices of onions, salt, and saute it till onions turn slightly transparent.
  • Then add ginger garlic paste and saute it for half a minute.
  • In the same pan add turmeric powder, slitted green chillies, chopped mint leaves, coriander leaves, tomatoes, coconut milk, mix it.
  • In it, add water and cook with closed lid till it comes to a boil.
  • Add rice, cook with closed lid for about 3 minutes on high flame then remove the lid, add garam masala, mango slices, and arrange the marinate shrimps press them.
  • Add butterand cook with closed lid for 5 minutes on a slow flame.
  • After 5 minutes, remove the lid, mix the rice and switch off the flame. let it cook in steam with closed lid.
