Ingredients used in Shimi ka Achar (String bean pickle)
• String bean - 500 grams.
• Sesame seeds - 100 grams.
• Green chili (sliced) - 7 numbers.
• Salt - 1 tea spoon.
• Lemon juice - 1 tea spoon.
• Mustard oil - 2 teaspoons.
Method:
  • First wash the string beans and then cut it into thin slanting slices.
  • Boil the beans for five minutes and strain it.
  • Roast the sesame seeds for three minutes and then grind it to make a thick paste.
  • Heat the oil, fry few sliced green chilies. Pour these fried chilis over the beans.
  • Add the sesame paste to it along with lemon and salt. Mix them well.

For a good meal serve it with Sel roti.
