Ingredients used in RASAM
• Ripe tomato - 2 big.
• Tamarind juice - 2 cups.
• Cilantro/coriander - half bunch.
• Curry leaves - half bunch.
• Whole black pepper - 2 tablespoons.
• Cumin seeds - 2 tablespoons.
• Mustard seeds - 1 tea spoon.
• Hing - to taste.
• Dry red chilies - 2 numbers.
• Garlic - 4 numbers.
• Ghee - 1 tablespoon.
• Rasam powder or samber powder - 2 tablespoons.
• Salt - to taste.
Method:
  • Blend the fresh coriander leaves, curry leaves, 1tablespoon of pepper, 1tablespoon of cumin seed and keep it aside.
  • In a pestle crush the remaining pepper and cumin seeds.Keep aside.
  • Cut tomatoes into small cubes and peel the garlic skin and cut it into small pieces.
  • Now, take a thick vessel, add the cut tomatoes, add rasam powder,salt and pour little water and bring it to boil.
  • Add tamarind juice once the tomatoes are cooked well.(if you add tamarind juice before itself the tomatoes will not get cooked properly)
  • Once it starts boiling, add the blended mixture to it and allow it to boil for few minutes.
  • Remove it from flame once the raw smell of the tamarind juice disappears.
  • Now, take a small pan, add 1tbsp of ghee, mustard seeds, red chillies, garlic, curry leaves,crushed pepper and jeera powder(step 2), hing and saute it for a minute or till the mustard splutters.
  • Put some coriander leaves on the top of the rasam and add the fried things to the rasam.

serve hot.

A vegetarian diet has been considered very healthy and nutritious when compared with non-vegetarian diets as vegetarian diets have been associated with various health benefits such as: ?  Lower LDL cholesterol levels ?  lower risk of death from ischemic heart disease ?  lower blood pressure ?  lower rates of hypertension ?  type 2 diabetes ?  lower body mass index ?  lower overall cancer rates With the best available from our nature’s resources, most of the food choices in the vegetarian diet are healthy such as fruits, vegetables, beans, legumes, cereal grains, nuts and seeds, dairy products and eggs are all healthy choices of a vegetarian diet.
