Variation of the burji that Sanjay makes. This is a typical west Indian egg recipe with an exotic mix of prawns that I discovered in my bachelor cooking life.

Ingredients used in Prawns burji
• Mustard seeds - 1 to fry.
• Salt - 1 pinch.
• Prawns - 1 bag.
• Chilli powder - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Oil - 1 to fry.
• Onion - 1 large.
• Eggs - 3 piece.
Method:
  • Add oil to a non-stick pan. Saute the mustard seeds and cumin seeds till they start cracking.
  • Then add finely chopped onions and saute again until the onion turns transparent.
  • Later add salt to taste when the mixture starts oozing oil out and stir it.
  • Add prawns and fry on a medium flame till prawns are tender cooked.
  • Whisk the eggs and add to the saute. Turn the flame down and stir cook till the eggs are tender cooked.
